Ingredients
  

  • 1 lb Red kidney beans
  • 6 cups Water
  • 1 lb Seasoned ham (Chisesi’s is the best)
  • 14 oz Smoked pork sausage
  • 1 cup Diced onion
  • 1/4 cup Diced celery
  • 1/2 cup Green bell pepper
  • 1 tsp Minced garlic
  • 1 leaf Bay leaves
  • 1/4 tsp Cayenne pepper (1/2 tsp for spicier)
  • 1 tsp Salt or to taste

Method
 

  1. Rinse red beans and add them to the slow cooker
  2. Add and 6 cups of water (you can soak beans overnight in the crockpot if desired)
  3. Cut the seasoned ham and smoked pork sausage into bite-size pieces. (I like to fry the ham and sausage for about five minutes for added flavor but if you’re in a rush, just add these right into the slow cooker from the package.)
  4. Add chopped onion, celery, bell pepper, garlic, bay leaves, cayenne and salt Into the slow cooker
  5. Set slow cooker to high for six hours or low for 8 to 10 hours, depending on your schedule. It taste delicious on any of these settings and the slow cooker will do it’s job even if you are not home. So easy right?
  6. Once cooked, mash the beans on the side or bottom of the crockpot while stirring to thicken up the gravy. Cook a pot of rice and enjoy!
